I had an epiphany with a recipe this week! I love cinnamon, cinnamon rolls, cinnamon toast, and anything else with cinnamon, so why not try to incorporate that into a cupcake? The only problem was I didn't know what kind of base to use and what icing would go best. This prompted me to base the cupcake off of a cinnamon roll. I used a simple cake mix, made cinnamon roll gooey filling, and cinnamon roll icing. They were delicious, and I was very pleased with how much they tasted like cinnamon rolls. However, they are not pretty cupcakes, so be warned.
Ingredients:
For the cake:
I used Duncan Hines Butter Golden cake mix, but any yellow cake will do fine. You will need all of the ingredients listed on the box that you have chosen.
Cinnamon Roll Gooey Filling:
1/3 Cup of Light Brown Sugar
1/4 Cup Melted Unsalted Butter
1 1/4-1/3 Teaspoon Cinnamon
Cinnamon Roll Icing:
3 Cups Powder Sugar
3 Tablespoons Milk (I used 1%, but any kind will work)
1 Tablespoon Water
Step 1: Following the directions to your chosen cake mix, mix all of the ingredients for your cake mix. Mine was very simple with only 3 extra ingredients.
Step 2: Now that the cake mix is mixed, you can begin on the cinnamon filling. Pour the brown sugar, melted butter, and cinnamon in a bowl together. Then use a whisk to combine all of the components into a dark liquid. You will have to stir the mixture every few minutes to keep the ingredients from separating.
(Yes, I know it looks gross)
Step 3: Fill the cupcake pan ,or in my case, my baby cakes cupcake maker, about half way full. I cannot stress enough that for this recipe cupcake papers are crucial! Just greasing the pan will not be sufficient with the cinnamon-brown sugar swirl.
Step 4: If you're using smaller cupcakes like me, drizzle about a half of a teaspoon of the cinnamon-brown sugar mixture onto the cupcake mix. If you're using normal sized cupcake pan then drizzle a whole teaspoon.
Step 5: Using a butter knife, swirl the cinnamon-brown sugar around in the cupcake mix.
Step 6: Now that the cinnamon is swirled within the cupcake batter, you can bake them. I baked mine for 7 minutes in my cupcake machine, but if you're using a regular oven and pan just follow the directions for the cake mix you chose.
Step 7: While the cupcakes are baking you can make the icing. The icing is just basic cinnamon roll icing; to make it you just mix the powdered sugar, milk, and tablespoon of water together with a whisk. It is super easy to make.

Step 8: When the cupcakes are done baking, let them cool then ice them! And then they're ready to eat.
